Switched to pyodbc for taget-mssql. Could get some mileage out of a generic odbc singer sdk template

I thought we had an issue for that in https://gitlab.com/meltano/singer-sdk/-/issues already but I can't find it now!

https://gitlab.com/autoidm/autoidm-target-mssql/-/tree/master is working with it right now 😄 give me another few weeks and I'll feel more confident in publishing it
