Meltano

Here's a production thing that wasn't clear to us (<@U06CE9BN604>):

examples on the home page all show doing `meltano config [plugin] set` for configuration, but this command saves configs in the database. If you are doing a production workflow, you should really use the `config` block in `meltano.yml` combined with environment variables. Took us a long time to figure that out

Now I see that section in the production document and understand it, but somehow I missed it or skipped over it before

perhaps there could be a flag on `meltano config` like `--save=yml` or something like that

I realized that that was unclear and made sure to cover it in the new doc, although there's definitely room for improvement: for the feature proposal, you're thinking of <https://gitlab.com/meltano/meltano/-/issues/2013> :wink: I had expected to get to that this week, but so far :face_with_thermometer: has gotten in the way of that. I'm starting to feel better though so I should get to it sooner rather than later (unless someone contributes it first :wink:)

perfect! now that we know what to do, editing the meltano.yml file is easy so this isn't a blocker
