We have also integrated Micromamba, Airflow 2.6.0, Meltano, and Docker. We use custom helm charts to deploy in EKS. We can share the Dockerfile if anybody is interested. We tried Meltano Airflow plugin but we don't see the benefit to be honest. The bash operator of Airflow is a good isolation together with venv on top of conda.
