Random question: Anyone ever come across or hear of any taps that extract emails ? (say, from gmail or other email provider) ?

https://github.com/Mashey/tap-gmail is a start! GitLab contracted them to build this one and it was intentionally limited to just get counts - but I think you could get it working to get more data
