Is there a "target" folder somewhere for dbt models? Where you can see the actual compiled code being run against snowflake? Not sure if it exists or if meltano handles thing differently than a standard dbt deployment

yes, it's in

.meltano/transformers

if you look at your lock file too it'll show you all the configs we're setting. An even easier way to see is to call

meltano config dbt list

and it'll show you everthing
