Is it possible to use a Meltano to only to do

dbt run

or

dbt snapshot

and use airflow to track the status of that job? All the data I need as input is in Snowflake already. It seems like

meltano etl

wants a tap and target.

meltano invoke dbt ...

to directly invoke dbt with whatever arguments you please: https://meltano.com/docs/command-line-interface.html#invoke

My company currently uses fivetran to sync a mysql database to snowflake, but we investigating what's possible using other tools and bringing in data from braintree and GA.
